All hail kale! What a super duper food. I adore kale chips, they are a fabulously healthy, delicious, very easy to make snack! Kale chips make a fantastic alternative to potato or wheat based crisps. Kale is so versatile due to its mild flavour and therefore can easily be made into either a sweet, savoury or sour chip, this is one of my favourite recipes as it reminds me of a beautiful homemade onion chutney.

Ingredients
10 Cups of Kale
1 Cup of Cashews
1 Cup of Fresh Pineapple
1 Medium Red Onion
3 Tbsp of Nutritional Yeast
Juice of 1/2 Lime
1/2 Tsp Himalayan Salt
20 mls Water
Method
Start by washing and de stemming your kale and place in a large mixing bowl.
Add the cashews, pineapple, onion, nutritional yeast, lime, salt and water to a food processor and mix well until a chunky paste has formed, its good to leave the cashews in small pieces to create more texture and crunch.
Pour the paste over the kale and mix well, you can get your hands dirty in this bit or get the kids involved, they will love it! You need to massage the kale for about five minutes to help the flavours sink in and ensure they are evenly saturated.
Spread evenly onto your paraflex sheet and place in the dehydrator at 105/41 degrees for about 15 hours. If you don't have a dehydrator then you can pop these in the oven on a baking tray, on the lowest setting with the door slightly open for a couple of hours. Enjoy these little beauties, they make a delicious, healthy snack at home or on the go.
