Creamy Butternut Squash Soup

This is my favourite winter soup, its warming, comforting, sweet and delicious. Its packed full of antioxidant rich vegetables and high in Vitamin A which provides immune sport in the colder months and helps keep your skin healthy to prevent it from drying out. Its a fast and simple recipe and can be left to roast while doing other things, prep time is 15 minutes! You can even batch cook and freeze some for those days where time runs away with you!

Food Properties

Serves: 4

Ready in: 1 Hour

Tip: Double the recipe and freeze some for hurried days!


1 Medium Butternut Squash

2 Large Carrots

3 Medium Onions

3 Cloves of Garlic

2 Tbsps of Mixed Herbs

1 Litre of Vegetable Stock/Bouillon

1 Cup of Almond Milk

1/4 tsp of Himalayan Salt

Olive or Coconut Oil for roasting

Season with

Pinch of Black Pepper

Pinch of Himalayan Salt

3 Tbsps of Nutritional Yeast


Peel the squash and slice into small cubes, chop the carrots into small pieces and add to the roasting dish with the onions. Peel the garlic and add the whole cloves to the roasting dish. Season the vegetables with mixed herbs, himalayan salt and cover in olive or coconut oil. Bake for about 40 mins or until soft.

Make 1 litre of Bouillon/Vegetable stock and add to a blender with mls of almond milk. Add the roasted vegetables and blend well. Serve and season as required.
